Roughly chop the figs and cook them in 120 ml water for about 5 minutes until soft. Add granulated sugar, lemon juice, and honey, and simmer for another minute. Let the mixture cool slightly, then finely puree it.

Preheat the oven to 200 °C top/bottom heat.

Divide the puff pastry into two halves and thinly brush both parts with egg yolk.

Chef's tip

Serve the sticks best fresh and crispy. They go perfectly with a robust red wine or as part of an antipasti platter.
