Rinse the sushi rice thoroughly in a sieve with cold water until the water runs clear. Then bring to a boil according to the package instructions with 1.2 times the amount of water, cover, and let simmer on the lowest heat for about 12–15 minutes, then let it rest off the heat for another 10 minutes.
Peel and finely grate the ginger. Finely chop the garlic cloves. Wash the spring onions and slice into thin rings. Briefly blanch the frozen peas in boiling salted water for about 1–2 minutes, quench in cold water, and drain.
Prepare Chicken Soboro & Iri Tamago
In a bowl, mix the soy sauce and cane sugar until the sugar has largely dissolved. Heat the vegetable oil in a pan and briefly sauté the ginger and garlic. Add the minced meat and brown while stirring constantly with a whisk or wooden spoon so that fine meat crumbles form.
Chef's tip
Secret tip for perfect soboro: Use a whisk when browning the minced meat – this breaks the meat up especially finely and evenly into the typical crumbly texture.
