- 200 g fresh turkey breast
- 2 slices breakfast bacon
- 1 pc. Free-range eggs M
- 1 slice Gouda slices
- 30 g Beef tomato
- 20 g Iceberg lettuce
- 2 tbsp Mayonnaise
- 1 tbsp extra virgin olive oil (incl. spray)
- 1 tsp Provencal herbs
- 1 tsp Chicken seasoning
- 1 pinch fine iodized table salt
- 1 pinch ground black pepper
Preheat the oven to 160 °C. Cut the turkey breast into 2-3 pieces, roughly the size and thickness of small cutlets. Season with chicken seasoning, salt, and pepper. In an oven-safe pan with olive oil, sear from both sides for 3-4 minutes until golden brown. Place the pan in the oven for about 10 minutes, then remove and let it rest briefly.
Meanwhile, spray the toast slices with olive oil spray and toast them in a toaster or pan until golden brown. Fry the breakfast bacon in a pan until crispy. In the same fat, slowly fry the fried egg. Slice the turkey breast and tomatoes as thinly as possible.
Layer the sandwich as follows: toast, mayonnaise, bacon, turkey breast, tomatoes, mayonnaise, toast, mayonnaise, lettuce, tomatoes, fried egg, mayonnaise, and place the last slice of toast on top. Secure with wooden skewers and halve diagonally.
Chef's tip
For a particularly juicy result, let the turkey breast rest briefly wrapped in aluminum foil after frying. This allows the meat juices to distribute optimally.
