Preparation method
Preheat the oven to 200 °C (top/bottom heat) and line a baking sheet with baking paper.
Slice the tomatoes, zucchini, and onion thinly, then halve them. Cut the chicken breasts lengthwise about 5–6 times (the cuts should be approx. 1.5 cm deep, making sure not to cut all the way through the meat).
Season the meat generously with salt and pepper. Insert half a slice of zucchini, onion, and tomato alternately into each cut. Drizzle the olive oil over the prepared chicken breasts and sprinkle them with the Italian herb mixture.
Chef's tip
Serve the Chicken Primavera with a fresh green salad or crispy baguette to soak up the delicious juices.
