Ingredients
- 4 Chicken Breast Supreme with skin
- 6 tbsp vegetable oil
- 1 pinch ground black pepper
- 1 pinch fine iodized table salt
Method
- 1Preheat the oven to 180 °C.
- 2Generously salt and pepper the chicken breasts on both sides.
- 3Heat the oil in a large pan over high heat. First, sear the meat skin-side down for about 4 minutes until golden brown. While searing, gently press the meat against the bottom of the pan with a wooden spoon to ensure the skin crisps evenly. Reduce the heat to medium, flip the meat, and fry for another 3 minutes until golden brown. Place the seared meat on a baking sheet and finish cooking in the oven for about 8 minutes.
- 4Place the cooked meat on a cutting board and let it rest for about 6 minutes. Then slice it into medallions and serve immediately.
