Ingredients
- 2 tbsp extra virgin olive oil
- 500 g chicken breast without skin
- 1 yellow onion
- 3 dried bay leaves
- 5 g fresh thyme
- 1 tsp dried oregano
- 10 g fresh parsley
- 3 cloves fresh garlic
- 800 g chopped canned tomatoes
- 1 tbsp brown sugar
- 500 g whole wheat gnocchi
- 40 g grated Parmesan
- 1 bunch fresh basil
- 1 pinch fine table salt
- 1 pinch ground black pepper
Method
- 1Heat the olive oil in a large pan over low heat. Increase the heat to medium-high, add the chicken breast pieces and sear for 7–8 minutes until the meat is sealed all around. Then reduce the heat to medium, remove the chicken from the pan and set aside.
- 2Add the onion to the pan and sauté until translucent for 5–6 minutes. Add bay leaves, thyme, oregano, parsley, and garlic. Sauté for 1–2 minutes, then pour in the chopped canned tomatoes. Fill the empty cans with water and also pour this into the pan.
- 3Let the tomato sauce reduce over high heat for about 15 minutes. Then reduce the heat to medium, add the chicken meat and brown sugar, and simmer for another 5 minutes. Afterwards, add the gnocchi, Parmesan, salt, and pepper. Cook everything for 8–10 minutes (or according to package instructions), stirring occasionally to prevent the gnocchi from sticking to the bottom of the pan.
- 4Before serving, sprinkle with finely chopped fresh basil.
