Preheat the grill (or contact grill) to medium heat.

Cut the turkey breast into slices about 1 cm thick. Season both sides with salt, pepper, and dried thyme. Drizzle with olive oil and gently massage it in. Grill the turkey slices on the hot grill for about 2–3 minutes per side until cooked through.

Meanwhile, slice the Camembert thinly. For the dressing, thoroughly mix Dijon mustard, dried cranberries, ground rosemary, honey, and lemon juice in a small bowl.
Chef's tip
For a particularly spicy note, you can also use a strong mountain cheese instead of Camembert. Serve the sandwich with a fresh green salad.
