Prepare the dough & let it rest
Stir the lukewarm water (approx. 35 °C) with granulated sugar and dry yeast in a mixing bowl and let it sit for 5 minutes until a light foam forms.
Add the plain wheat flour and fine salt. Knead everything with a wooden spoon or your hands into a soft, slightly sticky dough. Cover the bowl and let it rest in a warm place for about 30 minutes while preparing the filling.
Prepare the savoury filling
Pour boiling water over the glass noodles, let soak for 5 minutes, drain, rinse with cold water, and cut into approx. 2–3 cm long pieces using kitchen scissors.
Chef's tip
Lightly oil the spatula beforehand for flipping and flattening – this ensures the sticky dough will not stick.
A simple dip made of 2 tbsp soy sauce, 1 tsp rice vinegar, a splash of sesame oil, and a little chilli pairs wonderfully with this!
