Cook the jasmine rice in lightly salted water according to the package instructions and keep warm.
Cut the chicken breast into bite-sized, thin strips. Deseed the bell pepper and cut into strips. Peel the carrot and cut into fine matchsticks. Quarter the mushrooms, trim the snow peas, and slice the spring onions diagonally into rings. Finely chop the garlic and ginger.
For the wok sauce, stir together the chicken broth, soy sauce, oyster sauce, cane sugar, sesame oil, and cornstarch in a small bowl until smooth and the starch is completely dissolved.
Chef's tip
Tip for maximum crispness: Stir-fry the vegetables in the wok only briefly over very high heat so they stay crisp-tender and colorful.
Preparation is everything (Mise en Place): Since stir-frying in the wok only takes a few minutes, all ingredients and the sauce should be fully prepared and ready before heating the wok.
