Preheat the oven to 180 °C top/bottom heat. Prepare a muffin tin for 12 pieces and line with paper muffin cups.

Core the apple and grate it coarsely. Finely grate the carrot. Place both in a medium-sized bowl. Mash the banana with a fork into a fine pulp and also add it to the bowl.

Add the remaining ingredients (oats, ground almonds, apple sauce, and baking powder) and mix everything into a uniform dough. Fill the dough into the prepared muffin cups.
Chef's tip
For a particularly fine texture, you can briefly grind the oats in a blender beforehand. This will make the muffins even fluffier!
