Ingredients
- 300 g puff pastry (or 1 package fresh puff pastry, approx. 275 g)
- 200 g ham (sliced)
- 200 g Gouda (grated)
- 1 tbsp whole milk
- 1 egg (size M)
- 2 cloves garlic (fresh)
- 1 small yellow onion
- 2 tbsp basil (fresh, finely chopped)
- 4 tbsp diced tomatoes (canned)
- 6 tbsp ketchup
- 2 tsp Herbs de Provence (dried)
- 2 tsp oregano (dried)

- 1 piece baking paper
Preparation
- 1Preheat the oven to 190 °C top/bottom heat and line a baking sheet with baking paper. Roll out the puff pastry on a lightly floured surface into a rectangle (approx. 20 cm × 30 cm). If you are using pre-rolled dough, simply unroll it.
- 2Peel and finely press the garlic. Peel and finely dice the onion. In a small bowl, thoroughly mix the garlic, onion, Herbs de Provence, finely chopped basil, ketchup, and diced tomatoes. Spread the sauce evenly over the puff pastry with the back of a spoon.
- 3Now, evenly layer the dough first with the Gouda slices (or grated Gouda) and then with the ham. Tightly roll up the dough from the long side. Cut the roll into about 15 equally thick slices with a sharp knife.
- 4Place the swirls cut-side up on the prepared baking sheet. In a small cup, whisk the egg with the milk and dried oregano. Brush the swirls with the egg mixture.
- 5Place the baking sheet in the preheated oven and bake the swirls for approx. 30–35 minutes until golden brown. Let them cool for at least 30 minutes before serving to ensure they become nice and crispy.
Tip
For a vegetarian option, you can simply omit the ham and use more cheese or finely diced vegetables like bell peppers instead.
