Preparation of the chocolate layer
First, melt the dark chocolate in a water bath. To do this, place a bowl over a pot of gently simmering water (the bottom of the bowl should not touch the water). Break the chocolate into pieces and let it melt slowly while stirring. Then let it cool for about 2 minutes.
In a bowl, stir 250 g quark until smooth with 1 tbsp honey. Slowly fold the slightly cooled chocolate into the quark mixture, stirring constantly, until a smooth, creamy chocolate mixture is formed.
Preparation of the vanilla layer & serving
In a second bowl, whip the remaining quark (200 g) with the pulp of the vanilla bean and the remaining tbsp honey until creamy.
Chef's tip
For that extra touch, you can finely grate some dark chocolate over the finished dessert and sprinkle with a few chopped hazelnuts. The dessert keeps in the refrigerator for about 3–4 days.
