Preparation of the Base
Preheat the oven to 200 – 205 °C top/bottom heat. Line a baking sheet (approx. 30 x 40 cm) with baking paper.
Separate the eggs. Place the yolks in a bowl and fill the egg whites into a tall container for whipping. In a large bowl, mix coconut flakes, potato starch, cocoa powder, and baking powder.
Add the yolks and 20 g honey to the dry mixture and mix thoroughly with a whisk. Beat the egg whites with a pinch of salt until stiff (approx. 3 minutes). Carefully and slowly fold the beaten egg whites into the cocoa mixture.
Chef's tip
For a particularly fine texture, you can briefly grind the coconut flakes even finer in a blender before use.
The slices stay fresh in the refrigerator in an airtight container for approx. 2-3 days.
