
Vegan Brownies with Pecans and Sour Cherries

Preparation method
Carefully melt the chocolate and vegan margarine in a bain-marie. Stir the granulated sugar and vanilla sugar into the chocolate mixture. Add the vegan egg substitute and mix well. Finally, stir in 90 g of the flour and a pinch of salt until a smooth batter forms.
Drain the sour cherries well, lightly coat them in the remaining flour (1 tbsp), and carefully fold them into the batter along with the pecans.
Pour the brownie batter into a prepared baking dish and bake in the preheated oven at 160 °C (top/bottom heat) for approx. 50 minutes.
Chef's tip
If you coat the sour cherries in flour beforehand, they won't sink to the bottom of the batter and will distribute more evenly. This also prevents them from burning on the bottom of the pan.
The pecans can be replaced with walnuts or pistachios as desired. If you don't like nuts, simply omit them entirely.
