Ingredients

  • 700 g fresh cherries
  • 180 g coarse wheat flour
  • 260 g granulated sugar
  • 160 g all-purpose wheat flour
  • 250 ml whole milk 3.5% fat
  • 20 g vanilla sugar
  • 3 pcs free-range eggs M
  • 12 g baking powder
  • 1 tbsp powdered sugar for sprinkling
  • 1 tbsp lightly salted butter for greasing

    Preheat the oven to 180 °C top/bottom heat. Thoroughly grease a baking sheet or baking pan (approx. 22x28 cm) with butter and sprinkle with coarse flour.

    Separate the eggs. Beat the egg whites until very stiff. In a food processor, beat the egg yolks with granulated sugar and vanilla sugar until frothy and light in color.

    Mix both types of flour with the baking powder. Alternately stir into the egg yolk mixture with the milk until a smooth batter forms. Carefully fold the egg whites into the batter by hand.

    Spread the batter evenly onto the prepared baking sheet and top with the pitted cherries. Bake in the preheated oven for approx. 30 minutes until golden brown. Use a skewer test to check if the cake is done.

    Let the cake cool completely, otherwise it will shrink when cut. Before serving, generously sprinkle with powdered sugar. The cake also tastes excellent with apricots, strawberries, or blueberries.
