Ingredients
- 700 g fresh cherries
- 180 g coarse wheat flour
- 260 g granulated sugar
- 160 g all-purpose wheat flour
- 250 ml whole milk 3.5% fat
- 20 g vanilla sugar
- 3 pcs free-range eggs M
- 12 g baking powder
- 1 tbsp powdered sugar for sprinkling
- 1 tbsp lightly salted butter for greasing
Method
- 1Preheat the oven to 180 °C top/bottom heat. Thoroughly grease a baking sheet or baking pan (approx. 22x28 cm) with butter and sprinkle with coarse flour.
- 2Separate the eggs. Beat the egg whites until very stiff. In a food processor, beat the egg yolks with granulated sugar and vanilla sugar until frothy and light in color.
- 3Mix both types of flour with the baking powder. Alternately stir into the egg yolk mixture with the milk until a smooth batter forms. Carefully fold the egg whites into the batter by hand.
- 4Spread the batter evenly onto the prepared baking sheet and top with the pitted cherries. Bake in the preheated oven for approx. 30 minutes until golden brown. Use a skewer test to check if the cake is done.
- 5Let the cake cool completely, otherwise it will shrink when cut. Before serving, generously sprinkle with powdered sugar. The cake also tastes excellent with apricots, strawberries, or blueberries.
