Line the bottom of a springform pan (Ø 24 cm) with baking paper. Grease the rim with butter and sprinkle with flour or shredded coconut.

Wash the lemon and oranges thoroughly and rinse with hot water. Finely grate the zest of the lemon and oranges (set aside separately). Squeeze about 100 ml of juice from one orange.

Soak the raisins in the freshly squeezed orange juice.
Chef's tip
Serve the cake with a dollop of whipped cream or a scoop of vanilla ice cream for an even finer dessert experience.
