Preparation & Dough
Preheat the oven to 175–180 °C. Line a baking pan (approx. 25 cm × 25 cm) with baking paper.
Prepare two bowls. In the larger bowl, mix the spelt flour with baking powder, baking cocoa, and xylitol. Add the melted butter, 3 eggs, and 300 ml of the milk. Stir everything into a smooth dough and pour it into the prepared pan.
Quark Layer & Baking
In the second bowl, mix the quark with the remaining egg, vanilla extract, the remaining 100 ml of milk, and honey. Spoon the quark mixture irregularly over the dark dough. Carefully draw circles through both layers with the end of a spoon to create a beautiful marble pattern.
Chef's tip
For a particularly intense aroma, you can add a pinch of salt to the chocolate dough. The brownies taste best when they have cooled thoroughly in the refrigerator.
