Preparation method

Soak the dried chickpeas in plenty of water 12 hours before preparation.

Then rinse the chickpeas thoroughly and drain well.

Finely blend the chickpeas together with the finely chopped onion and pressed garlic. Stir in the spices (cayenne pepper, coriander, cumin) and the chopped fresh coriander. Season with salt and a pinch of pepper.

Chef's tip

Since falafel are naturally rather dry, don't skimp on the mayonnaise – it provides the necessary juiciness.
