Mix arugula and lamb's lettuce. Tear the Kaiser roll into small pieces. Finely chop anchovy fillets. Peel garlic, halve lengthwise, and remove the germ.

Bring water to a boil in a small pot. Prepare a piece of cling film (approx. 30 cm) and line a small bowl with it, so that the edges overhang.

Add a teaspoon of oil to the cling film-lined bowl. Carefully crack an egg into it, without breaking the yolk. Firmly press the film together at the top, so that no air is trapped, and tie a knot. Repeat with the remaining eggs.
