Ingredients
- 1 whole trout (approx. 450 g)
- 70 g butter
- 2 sprigs fresh thyme
- 1 sprig fresh rosemary
- 1 pinch ground black pepper
- 1 pinch fine table salt
- 1 sheet baking paper
Method
- 1Preheat the oven to 180 °C top/bottom heat. Slice the butter.
- 2Rinse the trout under cold running water and pat dry thoroughly with kitchen paper. Season the fish generously with salt and pepper on all sides – including the inside.
- 3Place the herbs and about 20 g of butter inside the fish. Line a baking sheet with baking paper, spread 20 g of butter on it, and place the prepared trout on top. Distribute the remaining butter over the fish. Slide the baking sheet into the preheated oven and bake the trout for approx. 15 minutes. Serve immediately and pour the melted butter from the baking sheet over it.
