- 6 pcs Oysters (fresh)
- 1 pc Organic Lemon
- 1 pc Tabasco Sauce (to taste)
- 1 bottle Dry White Wine (e.g., Chablis or Sauvignon Blanc)
Carefully open the oysters immediately before serving (see tips). Remove any shell fragments, but preserve the valuable oyster liquor in the shell.
Arrange the opened oysters on a bed of crushed ice or coarse sea salt. Cut the lemon into wedges and serve alongside.
Drizzle each oyster with a few drops of fresh lemon juice. If you like it spicy, add 1-2 drops of Tabasco. Slurp the oyster directly from the shell and enjoy.
Chef's tip
Opening oysters: Use a clean kitchen towel and a special oyster knife. Hold the oyster firmly in the towel with the flat side facing up. Insert the knife at the hinge (the pointed side) and pry open the shell with a twisting motion. Separate the muscle on the top, remove the lid, and then detach the muscle on the bottom. Only serve oysters that were tightly closed before opening!
