Preparation method

Ingredients overview

  • 450 g salmon fillet (3 fillets)
  • 150 g whole wheat couscous
  • 2 tbsp flat-leaf parsley (roughly chopped)
  • 70 ml cooking cream (12 % fat)
  • 1 organic lemon (zest and juice)
  • 1 tbsp dried basil
  • 2 tbsp fresh mint (roughly chopped)
  • Salt
  • Black pepper

Preheat the oven to 180–185 °C and prepare a baking dish (approx. 20 cm × 30 cm).

Prepare the couscous according to package directions. Once it's ready, mix in the chopped mint, parsley, lemon zest and juice, basil, cooking cream, and salt and pepper. Place the herb couscous in the baking dish. Lay the salmon fillets skin-side up on top of the couscous. Bake everything in the preheated oven for approx. 15–17 minutes at 180–185 °C.

Chef's tip

Serve the salmon with a fresh lemon wedge and sprinkle the dish with additional fresh herbs as desired.
