Preparation method
For the dough, mix flour, cornstarch, and salt in a bowl. Gradually add the boiling water in a thin stream and knead into a firm, non-sticky dough. Let the dough rest for about 30 minutes.
Meanwhile, finely chop the Napa cabbage. In a pan with a little oil, sauté the sliced garlic, 2 spring onions cut into rings, and half a chili pepper. As soon as the garlic is fragrant, add the Napa cabbage and shrimp. Stir in 3 tbsp soy sauce, season with pepper, and set aside.
For the sauce, mix 8 tbsp soy sauce, 1 tbsp sesame oil, 1 spring onion cut into rings, 1/2 tsp grated ginger, and the remaining half chili pepper in a small bowl. If desired, add some sweet chili sauce.
