Preheat the oven to 200 °C.

Drizzle the aubergine with vegetable oil, season with salt and pepper, and place on a baking sheet. Roast in the preheated oven for approx. 20 minutes. Then let cool, peel, halve lengthwise, and cut each half into 6–8 strips depending on its size.

Place the aubergine strips in a bowl, mix with 2 tbsp olive oil and the finely chopped thyme, and set aside.

Chef's tip

Serve with a glass of light white wine or rosé – this pairs perfectly with the delicate fish note.
