Prepare the Dough
Separate the egg, setting aside the egg white and yolk.
Crumble the fresh yeast into the lukewarm milk and stir well until dissolved. Caution: The milk must not be too hot, otherwise the yeast will lose its leavening power.
In a bowl, mix wheat flour, buckwheat flour, salt, and a pinch of pepper. Add the egg yolk and the yeast-milk mixture. Stir everything for about 5 minutes until a smooth dough forms. Cover the dough with a clean kitchen towel and let it rest in a warm place for about 1 hour.
Chef's tip
For a particularly fine aroma, you can stir a shot of vodka into the sour cream.
Instead of salmon caviar, trout caviar or fine slices of smoked salmon are also suitable.
For the best result, use a firm sour cream with a high fat content.
