Preparation method
Add the rice noodles to boiling water and let them steep for approx. 3 minutes with the lid closed. Then drain and immediately rinse with cold water. Tip: Store the noodles in a bowl with some cold water to prevent them from sticking together.
Wash, peel, and cut the vegetables into fine julienne strips (long, narrow sticks). Wash and pat dry the perilla leaves (or alternative herbs).
Fill a wide bowl or pan with warm water. Dip one sheet of rice paper for about 10 seconds until it becomes pliable. Place the wet paper on a work surface. Now layer the ingredients in the center. For a nice effect, arrange the shrimp so they shimmer through the paper later.
Chef's tip
The rolls taste best when fresh. If you prepare them in advance, cover them with a damp cloth to prevent the rice paper from drying out.
