Ingredients
- 4 tbsp brown cane sugar
- 2 tbsp lime juice
- 2 pcs shallots
- 2 cloves garlic
- ½ red chili pepper
- 400 g shrimp
- 2 pcs carrots
- 100 g green beans
- 2 tbsp sesame oil
- 1 handful fresh cilantro
- 1 pinch white sesame
Method
- 1First, prepare the sauce: In a small bowl, thoroughly mix the dark soy sauce, oyster sauce, brown cane sugar, and lime juice until the sugar has largely dissolved.
- 2Finely chop the shallots and garlic. Deseed the chili pepper and finely slice it as well. Peel the carrots and cut them into fine strips (julienne). Trim the green beans and halve them if necessary.
- 3Heat the sesame oil strongly in a wok or large pan. Briefly sauté the shallots, garlic, and chili in it. Add the shrimp and stir-fry for about 3 minutes until they are pink and cooked through.
- 4Add the carrot strips and green beans to the pan. Pour the prepared sauce over everything and stir-fry for another 2 minutes, so that the vegetables remain crisp but absorb the flavors.
- 5Finally, add the Udon noodles. Since these are usually pre-cooked, they only need to be heated in the pan for about one minute. Mix everything well, sprinkle with fresh cilantro and white sesame, and serve immediately.
