Preheat the oven to 200 °C top/bottom heat. Line a baking sheet with baking paper.
Cut the zucchini into approx. 1 cm thick slices. Deseed the yellow bell pepper and cut into bite-sized pieces. Wash the cherry tomatoes and leave whole or halve them.
Peel and finely chop the garlic. Wash the organic lemon under hot water, cut one half into thin slices and squeeze the juice from the other half.

Pairs wonderfully with fresh baguette, crispy ciabatta, or a creamy herb dip.
