Preparation method
If using raw prawns, peel them (leave the tail on for easier handling) and devein them. If using pre-cooked prawns, simply rinse them and pat them dry.
Peel the garlic and slice it thinly. Cut the chili pepper into fine strips (use less or omit if you don't like it too spicy).
In a large pan or small pot, heat the olive oil over medium heat. Add garlic and chili pepper and sauté until the garlic begins to turn golden. Pay close attention to ensure the garlic does not burn.
Chef's tip
Use high-quality extra virgin olive oil, as it forms the base of the sauce.
Make sure to only roast the garlic until golden yellow – if it gets too dark, it will taste bitter.
