Preparation method
Preheat the oven to 200-205 °C top/bottom heat. Line a baking sheet with parchment paper.
For the marinade, whisk the egg with rapeseed oil, cornstarch, smoked paprika powder, chili powder, honey, lemon juice, and fine lemon zest in a large bowl. Peel and finely press the garlic cloves and stir them in. Season with salt and pepper.
Divide the cauliflower into small florets. Add the florets to the bowl with the marinade and mix thoroughly until each piece is evenly coated. Spread the marinated cauliflower on the prepared baking sheet.
Chef's tip
Serve the cauliflower with a dip made from soy sauce, fresh ginger, a little honey, and a splash of vinegar for an Asian touch.
