Preparation
Peel the parsnips and cut them into cubes of approx. 1 cm. Peel, core, and cut the apples into cubes of approx. 1.5 cm. Finely chop the onions.
Cooking & Caramelizing
In a pot over medium heat, melt 30 g of the butter. Sauté the onions until translucent. Add apples, sugar, and cinnamon sticks, and let them caramelize slightly, stirring frequently. Add the parsnip cubes and roast for approx. 2 minutes.
Pour in 200 ml of water, place the lid on, and bring to a boil. Reduce the heat and simmer the vegetables over low heat for approx. 30 minutes until tender.
Chef's tip
For a finer result, use a sieve to strain the puree after blending.
If you use sweeter apple varieties, you can slightly reduce the amount of sugar.
Important: Add the cold butter only after cooking to achieve the perfect consistency and shine.
