
Classic Leaf Spinach with Egg

Preparation method
Wash the leaf spinach thoroughly, remove tough stems, and drain well. Peel and finely dice the onion and garlic.
In a large pot, melt the lard over medium heat. Sauté the diced onion until translucent. Reduce the heat, add the garlic, and roast for about 1 minute.
Add the spinach, stir well, and let it wilt for 1 minute with the lid closed. Remove the lid, simmer briefly, and roughly purée or chop the spinach as desired. Stir in the eggs and breadcrumbs and heat everything for another minute until the eggs lightly set.
Chef's tip
For an extra creamy version, you can add 80 ml of whipping cream at the end. Bring to a brief boil and serve – this way the spinach retains its vibrant green color.
Spinach should only be heated briefly so that it doesn't turn grey and retains its vitamins.
