- 250 g green beans
- 3 tbsp white miso paste
- 3 tbsp mirin rice wine
- 1/2 tsp English mustard
- Some grated lemon zest
- Ice cubes for shocking
Cook the green beans uncovered in lightly salted boiling water – only until they are still al dente, crisp, and bright green. In Japan, it is said that properly cooked green beans should hold their shape and not bend. After cooking, plunge them immediately into a bowl of ice water to preserve their fresh green color. Drain well and cut into pieces about 4 cm long.
In a bowl, mix the miso, mirin, and mustard, and add the lemon zest. Add the green beans and toss thoroughly until they are completely coated with the glaze. Serve immediately.
Chef's tip
For a more intense flavor, you can sprinkle the green beans with some toasted sesame seeds before serving.
