Baked Sweet Potatoes with Kale and Feta

Preparation method

Wash the sweet potatoes thoroughly under warm water and pat dry. Pierce each potato several times with a fork and place on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C (top/bottom heat) for approx. 45 minutes, until soft.

Meanwhile, wash the kale, remove the tough stems, and cut the leaves into small pieces. Crumble the feta with a fork. Combine both in a large bowl with 2 tbsp olive oil.

Remove the baked sweet potatoes from the oven and cut them open lengthwise. Carefully scoop out the flesh with a spoon, leaving a small border so the skin remains stable. Add the flesh to the kale-feta mixture, season with salt and pepper, and mix everything well.

Chef's tip

For an extra crispy touch, you can sprinkle some pine nuts over the filling before the second baking step.
