- 450 g frozen peas
- 40 g tahini paste
- 40 g extra virgin olive oil
- 15 g lemon juice
- 10 g granulated sugar
- 5 g fine iodized table salt
Bring 1 liter of water with 5 g of sugar to a boil in a small pot. Add the frozen peas, bring to a boil again, and cook for about 2 minutes. Drain the peas, reserving 80 ml of the cooking water, and transfer them to a blender.
Add the cooked peas, the remaining sugar, and all other ingredients (tahini, olive oil, lemon juice, and salt) to the blender. Blend everything for about 2 minutes until a perfectly smooth puree is formed. For an exceptionally fine texture, pass the puree through a fine sieve afterwards.
Chef's tip
Before serving, garnish the puree with a few whole peas and a few drops of olive oil for an elegant appearance. A stand mixer or a powerful immersion blender is essential for the creamy consistency.
