Coarsely grate the smoked tofu and peeled carrots and place them in a large bowl.

Add eggs, whole spelt flour, dried basil, curry powder, and a pinch of salt and pepper. Mix everything well until a uniform dough forms.

Heat the olive oil in a large pan over medium heat. Use a spoon to place small portions of dough into the pan and flatten them into patties. Fry about 4 patties until golden brown per batch.
Chef's tip
For extra crispiness, you can firmly squeeze the grated carrots in a clean kitchen towel before mixing to remove excess moisture.
