Ingredients

  • 180 g Soba noodles
  • 2 shallots
  • 1 piece ginger
  • 2 cloves garlic
  • 1 chili pepper
  • 2 tbsp vegetable oil
  • 2 tbsp sesame oil
  • 150 g natural tofu
  • 1 carrot
  • 150 g broccoli
  • 1 handful mung bean sprouts
  • 1 spring onion
  • 1 pinch ground black pepper

Sauce

  • 6 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tsp brown cane sugar

Garnish

  • 1 tbsp peeled sesame seeds

Preparation

    Cook the soba noodles according to package instructions (approx. 2-3 minutes) in boiling water, then drain and rinse with cold water.

    Heat the vegetable oil together with the sesame oil in a wok or large pan.

    Add the finely chopped shallots, grated ginger, pressed garlic, and finely sliced chili pepper and sauté briefly until fragrant.

    Add the broccoli cut into small florets, pour in half of the prepared sauce (mix soy sauce, lime juice, fish sauce, and sugar), and cook for approx. 2 minutes.

    Add the diced tofu, cooked soba noodles, carrot cut into fine strips, and the remaining sauce. Mix everything well and heat briefly.

    Finally, fold in the spring onion cut into rings and the mung bean sprouts.

    Mix everything well again, season with pepper, and sprinkle generously with sesame seeds before serving.
