
Creamy Zucchini Hummus with Tahini

- 400 g zucchini
- 1 tbsp extra virgin olive oil
- 25 g tahini sesame paste
- 1 clove fresh garlic
- 1 pinch fine iodized table salt

Preheat the oven to 180 °C top/bottom heat. Wash the zucchini and cut it into slices about 1 cm thick. Line a baking sheet with baking paper and spread the zucchini slices on it.

Roast the zucchini in the preheated oven for approx. 40 minutes until soft and lightly browned. Then let cool briefly.

Place the roasted zucchini slices together with the tahini, olive oil, peeled garlic clove, and a pinch of salt in a tall container. Puree everything finely with an immersion blender until a creamy hummus is formed. Season again to taste and serve.
Chef's tip
Serve the hummus with fresh vegetable sticks or crispy flatbread. A squeeze of lemon juice adds an extra fresh note to the dip.
