Peel the shallots and garlic. Cut the shallots into fine half-rings, slice 4 garlic cloves thinly, and crush the remaining clove with a garlic press. Wash the green beans and trim the ends. Heat olive oil and butter in a pan and sauté the shallots until golden brown. Add the garlic slices and fry briefly until they take on color. Remove everything from the pan and set aside.

Cut the bacon into small cubes and fry it in the same pan until crispy. Return the reserved shallots and garlic to the pan and add the green beans. Season with salt and pepper.

Mix honey with white wine vinegar and stir it into the green beans along with the chopped thyme and crushed garlic. Fry everything together for about 5–7 minutes until the green beans are cooked but still crisp.
