- 400 g whole blanched almonds
- 4 sprigs fresh organic thyme
- 4 tsp organic lemon (zest)
- 2 tbsp organic lemon juice
- 4 tsp coarse Himalayan salt
- 2 pieces Cayenne chili pepper
- 8 cloves fresh organic garlic
- 2 tbsp hot chili oil
Preparation: Lemon-Thyme Almonds

Roast 200 g of the almonds in a hot, dry pan. Add the picked thyme leaves, grated lemon zest, and coarse salt. Drizzle with lemon juice and roast until golden brown, stirring constantly.

Heat the chili oil in a second pan. Briefly sauté the chili cut into rings and the sliced garlic. Add the remaining 200 g of almonds and roast everything together until golden brown.
Chef's tip
Let the almonds cool completely before serving to achieve maximum crispiness. They will stay fresh for several days in an airtight jar.
