Ingredients
- 500ml chicken or turkey broth
- 150 g rice noodles
- 200g turkey breast, very thinly sliced
- A thumb-sized piece of ginger, sliced
- ½ cinnamon stick
- 1 tbsp fish sauce
- 1 star anise
- 1 clove
- 50g mung bean sprouts
Preparation
- 1Slice ginger into thin pieces. Simmer the broth gently with ginger, star anise, clove, and cinnamon for 30 minutes. Strain out the spices.
- 2Add fish sauce and keep the broth hot.
- 3Cook rice noodles separately according to package instructions, rinse briefly, and drain.
- 4Place raw turkey meat in serving bowls.
- 5Pour the boiling hot broth over it to gently cook the meat.
- 6Add rice noodles and top with mung bean sprouts, basil, mint, and cilantro.
- 7Serve immediately with lime wedges on the side.
