Ingredients
- 200g cooked whole grain rice
- ½ yellow onion, finely chopped
- 1 clove garlic, finely chopped
- 1 red bell pepper, diced
- 30g fresh cilantro, roughly chopped
- 1 tbsp olive oil
- 200g black beans, rinsed and drained
- 200ml water or bean broth
- A pinch of salt
- A pinch of pepper
- ½ jalapeño, finely chopped (optional – for those who like it spicy)
Preparation
- 1Heat the olive oil in a pan over medium heat. Add the onions and sauté until translucent and soft, about 3 minutes. Then add the garlic and fry briefly – about 20 seconds, until fragrant.
- 2Add black beans and water (or bean broth). Increase heat to medium-high and let everything simmer gently.
- 3Stir in the cooked rice and cook for about 2 minutes, until everything is well combined and nicely warm.
- 4Just before serving: Stir in cilantro, bell pepper, and (if using) jalapeño. Season with salt and freshly ground pepper – your spicy bowl is ready!
