Ingredients

  • 200g cooked whole grain rice
  • ½ yellow onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 red bell pepper, diced
  • 30g fresh cilantro, roughly chopped
  • 1 tbsp olive oil
  • 200g black beans, rinsed and drained
  • 200ml water or bean broth
  • A pinch of salt
  • A pinch of pepper
  • ½ jalapeño, finely chopped (optional – for those who like it spicy)

Preparation

  • 1
Heat the olive oil in a pan over medium heat. Add the onions and sauté until translucent and soft, about 3 minutes. Then add the garlic and fry briefly – about 20 seconds, until fragrant.
  • 2
Add black beans and water (or bean broth). Increase heat to medium-high and let everything simmer gently.
  • 3
Stir in the cooked rice and cook for about 2 minutes, until everything is well combined and nicely warm.
  • 4
Just before serving: Stir in cilantro, bell pepper, and (if using) jalapeño. Season with salt and freshly ground pepper – your spicy bowl is ready!
