Preparation of the rice

First, wash the sushi rice thoroughly several times until the water runs clear. Then cover with fresh water, bring to a boil, and simmer for about 10 minutes.

Remove the rice from the heat and let it swell, covered. In the meantime, prepare a mixture of rice vinegar, granulated sugar, and a pinch of salt. Carefully mix this marinade into the rice and let the rice cool completely.

Assembling the Onigirazu

Place a sheet of nori, shiny side down, on a piece of cling film. Place a portion of rice in the center and flatten it. Layer the marinated tofu, cucumber slices, and red cabbage on top.
