Ingredients
- 30g fresh mint
- 30g fresh parsley
- Zest of one lemon
- 15g basil
- 450g salmon fillet
- 70ml cream
- A pinch of salt
- A pinch of pepper
- 150g couscous
Preparation
- 1Preheat the oven to 180–185 °C and prepare a baking dish (approx. 20 × 30 cm).
- 2Cook the couscous according to package directions. Then mix with mint, parsley, lemon zest and juice, basil, cream, salt, and pepper. Place the mixture into the baking dish.
- 3Place the salmon fillets skin-side up on top of the couscous. Bake in the preheated oven for 15–17 minutes at 180–185 °C.
