Ingredients

  • 30g fresh mint
  • 30g fresh parsley
  • Zest of one lemon
  • 15g basil
  • 450g salmon fillet
  • 70ml cream
  • A pinch of salt
  • A pinch of pepper
  • 150g couscous

Preparation

    Preheat the oven to 180–185 °C and prepare a baking dish (approx. 20 × 30 cm).

    Cook the couscous according to package directions. Then mix with mint, parsley, lemon zest and juice, basil, cream, salt, and pepper. Place the mixture into the baking dish.
  • 3
    Place the salmon fillets skin-side up on top of the couscous. Bake in the preheated oven for 15–17 minutes at 180–185 °C.
