Ingredients
- 200 g smoked tofu
- 300 g carrots
- 4 pcs. free-range eggs
- 60 g smooth whole spelt flour
- 1 tsp dried basil
- 1 tsp curry powder
- 2 tbsp extra virgin olive oil
- 1 pinch fine table salt
- 1 pinch ground black pepper
Preparation
- 1Coarsely grate the smoked tofu and peeled carrots and place them in a large bowl.
- 2Add eggs, whole spelt flour, dried basil, curry powder, and a pinch of salt and pepper. Mix everything well until a uniform dough forms.
- 3Heat the olive oil in a large pan over medium heat. Use a spoon to place small portions of dough into the pan and flatten them into patties. Fry about 4 patties until golden brown per batch.
- 4Fry the patties for about 2–4 minutes on each side until crispy. The dough yields a total of about 16 small patties.
- 5Arrange the finished carrot patties on plates and ideally serve with a dollop of natural yogurt and a fresh green salad. Enjoy your meal!
Tip
For extra crispiness, you can firmly squeeze the grated carrots in a clean kitchen towel before mixing to remove excess moisture.
