Ingredients

  • 1kg Red Cabbage
  • 200ml Red Wine
  • 2 Onions
  • 80g Cranberries
  • 1 Apple
  • 6 tbsp Red Wine Vinegar
  • 1 dash Apple Juice
  • 1 Bay Leaf
  • 3 Cloves
  • 1 dash Oil
  • 1 tbsp Sugar
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

    First, halve the red cabbage and remove the core. Then, finely chop it, preferably with a vegetable slicer. Peel the apple and cut it into small pieces as well.

    Now mix the cabbage, apple, vinegar, apple juice, red wine, and cranberries. Add the bay leaf and cloves and let it sit for at least 2 hours, preferably overnight.

    Then cut the onion into thin strips and sauté them in oil. Add the sugar and melt until brown. Now add the cabbage mixture and let it stew for 40 minutes. Finally, remove the cloves and bay leaf and season with salt & pepper.
Tip
The cabbage should not be overcooked, but still a bit crunchy. If the cabbage absorbs too much liquid during cooking, you can thin it further with red wine or apple juice.
