- 400 g whole blanched almonds
- 4 sprigs fresh organic thyme
- 4 tsp organic lemon (zest)
- 2 tbsp organic lemon juice
- 4 tsp coarse Himalayan salt
- 2 pieces cayenne chili pepper
- 8 cloves fresh organic garlic
- 2 tbsp hot chili oil
Preparation: Lemon-Thyme Almonds
Toast 200 g of the almonds in a hot, dry pan. Add the plucked thyme leaves, grated lemon zest, and coarse salt. Drizzle with lemon juice and toast until golden brown, stirring constantly.
Preparation: Chili-Garlic Almonds
Heat the chili oil in a second pan. Briefly sauté the sliced chili and sliced garlic. Add the remaining 200 g of almonds and toast everything together until golden brown.
Chef's tip
Let the almonds cool completely before serving so they reach maximum crunchiness. They will keep fresh for several days in an airtight jar.
