Preparation method
Preparing the Beetroot
Wash the beetroots and wrap them individually in aluminum foil. Bake on a baking rack at 200 °C (top/bottom heat) for about 50 minutes until soft. The duration depends on the size of the beetroots. Alternatively, they can also be cooked on the grill.
Preparing the Herb Butter
Let the butter soften in a bowl. Finely chop the herbs, press the garlic, and stir both into the butter. Form the mixture into a roll in cling film and let it firm up in the refrigerator for about 30 minutes.
Mixing the Dip and Guacamole
For the dip, stir sour cream with olive oil, grated lemon zest, paprika powder, a pinch of salt, and pepper until smooth. Let it rest briefly.
