Preparation of the Fries

First, peel the potatoes and cut them into fry sticks. Place them in a large bowl, cover with water, and let stand for 10 minutes to release the starch. Drain the water, cover again with fresh water, and let soak for another 10 minutes.

Meanwhile, preheat the oven to 180 °C top/bottom heat. Line a baking sheet with baking paper.

Drain the water, thoroughly dry the fries, and spread them on the baking sheet. Drizzle with approx. 60 ml rapeseed oil, salt, and mix well. Bake in the preheated oven for approx. 30 minutes at 180 °C, then increase the temperature to 200 °C and bake for another 15–20 minutes until golden brown and crispy.
