First, prepare the 'Dampfl' (pre-dough): Mix the lukewarm milk with powdered sugar and yeast (dry yeast). In a second bowl, sift the flour, add 1 egg, 2 egg yolks, a pinch of salt, and 135 ml of sunflower oil. Once the 'Dampfl' has risen, pour it into the flour mixture.

Knead the dough until it is smooth and elastic. Place it in a clean bowl and let it rise in a warm place.

After rising, place the dough on a floured surface and divide it into 10 equal pieces. Form them into smooth buns so they don't crack on top.
Chef's tip
For an even more intense aroma, you can season the duck the day before and let it marinate overnight in the refrigerator.
